Lemon-Stovetop Chicken
Serves 2-4
Ingredients:
2 cups shredded chicken
1/2 box Stove Top dressing
2 lemons
1/4 cup extra virgin olive oil

First, I thawed some leftover crockpot chicken I thawed. No flavoring, not too exciting:
Then I took the chicken off the bone and shredded it by hand.
Next, spray a 9" round cake pan with non-stick spray. Spread the two cups of shredded chicken on the bottom.
Layer half a box of Stove Top dressing (any flavor will work).
Squeeze the juice of one lemon over the mixture, and then distribute the olive oil over the top. Slice the other lemon in rings and place evenly.
Because the chicken is already cooked, this only needs to be heated until hot, so place in 350 oven for about 10-15 minutes, or until evenly hot.
You can also use a pyrex or glass pie dish instead of metal and microwave the dish for 3-4 minutes, again until evenly hot.
This dish can be made ahead of time, covered with foil and refrigerated for a few days before cooking.
