Coffee Cake
This is a favorite with the kids. You can use any biscuit or pancake mix. I use more liquid than the recipe calls for, and I like to experiment with the strudel topping.
Coffee Cake Recipe
2 cups Bisquick or pancake mix
2/3 or 3/4 cup milk (I use soy milk)
1 egg
2 tablespoons sugar
In a small bowl, mix the pancake mix with the milk, egg, and sugar. If the mix seems dry or hard to stir, add a bit more milk, but no more than 3/4 cup milk total.
Spray a 9" metal pan or glass pie dish with non-stick spray and pour in the batter.
You can either bake the batter for 15 minutes and then add the topping or add the topping first and then bake.
I like to put the strudel topping directly on the batter because as it bakes, the brown sugar mix forms little tunnels in the cake.
Bake for 25 minutes at 350 degrees.
Strudel Topping Recipe
1/3 cup Bisquick or pancake mix
3 tablespoons margarine
2/3 cup brown sugar
1 teaspoon cinnamon
1/2 cup chopped pecans
1/2 teaspoon nutmeg
Combine all ingredients and cut together the butter with the other ingredients. I used a large spoon and mashed and spread everything together until the margarine was evenly dispersed.
